What Makes These Brownies Healthier
Lower in sugar and packed with fiber, these brownies won’t spike your blood sugar as much as your typical brownie-mix brownie. They are still chocolately and fudgy though, perfect to go with a cold glass of almond milk!
Betty Crocker’s Brownie mix has 17 grams of added sugar per brownie, this has 4.7 grams of added sugar per brownie (including the chocolate chips, but not including frosting). Betty’s has 1 gram of fiber per brownie, these have 4.2 grams per brownie (AND 4.2 grams of protein per brownie).

Brownie Mix in a Jar (Vegan, WFPB)
Equipment
- 1 pint jar or bag
Ingredients
Brownie Mix
- 1/2 cup coconut sugar (or any sugar)
- 1/3 cup cocoa powder
- 1/2 cup oat flour or whole wheat flour
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 cup non-dairy chocolate chips
- 1/2 cup chopped walnuts or pecans (optional, helps fill up the jar and make a pretty topping)
To make the brownies
- 1/4 cup any nut or seed butter
- 3/4 cup mashed baked sweet potato, pumpkin puree, or mashed banana (will have some banana flavor)
- 1/2 cup water
- 1 tsp vanilla extract
Instructions
- To make the mix, layer the dry ingredients in a small jar (pint size). Leave the chocolate chips for the top. Label it with the following directions or print the tag I have in the blog post to attach.
- To make the brownies: Preheat oven to 350 F. Line an 8x8 inch pan with parchment paper or grease it. In a bowl, mix together the dry mix and add: 1/4 cup peanut butter (or other nut butter or oil)3/4 cup mashed baked sweet potato1/2 cup water1 tsp vanilla extract Batter will be thick. Spread batter into pan. Sprinkle with additional chocolate chips, coconut, and/or nuts, if you don't plan to make the frosting. Bake 25 minutes-30 minutes. A toothpick should come out clean. Let cool before cutting. They are even better the next day.
To make sweet potato frosting (so good!)
- Bake a small sweet potato in the microwave for about 5 minutes, until soft. Blend together in a blender: 1/2 cup mashed baked sweet potato, 1/4 cup maple syrup or powdered sugar, 2 TBSP peanut butter, 2 TBSP cocoa powder. If needed, add more sweetener to taste and a little milk to thin to help it blend.





These are my kid’s favorite brownies. A couple years ago when we first got a freeze dryer I was trying to figure out how to make a mix like this with the (freeze dried) sweet potato IN with all the dry ingredients. We moved and I kind of forgot about that project. This reminded me of that and I’m going to try and figure out the ratios again!
