If you haven’t discovered dates yet, they are like nature’s caramel. The fiber in dates blunts the blood sugar spike of the natural sugar it contains (unlike ordinary caramel which has no fiber). Nothing says fall more than apple and (date) caramel! Make it nutrient-packed with additional toppings: ground flaxseed, vanilla, or even cooked riced cauliflower for an added vegetable without the taste!

I’ve not been one who likes apple chunks in my food. I started grating apples for oatmeal and other apple baked goods and the apple flavor seems to really shine through without the big cold chunks.
This is a single serving, but you could easily make a pot full of it for a family. Let each person customize their bowl with some maple syrup if they want it sweeter, nuts, chia or flax seed for nutrition, protein powder for more protein, or even a drizzle of peanut butter (so yummy!). It is a great starting point for an apple-themed oatmeal bar if you need to feed a crowd.
I’ve been re-branding oatmeal as “berry bowls” lately. I view the oatmeal as a topping more than the main deal. Having more berries than oatmeal made it so much more appealing to me after years of lots of oatmeal. This is like an apple bowl. The more variety of toppings, the better!

I have the nutrition facts below. Some people don’t even eat 12 grams of fiber in a day, and you’ll be getting it in one small breakfast bowl! All that fiber and the lack of added sweeteners makes this a blood-sugar-friendly breakfast, especially compared to ground grains (like flour in pancakes, cereal, muffins).

Caramel Apple Oatmeal for One
Ingredients
- 1/2 cup rolled oats
- 3/4 cup water
- 1/2 tsp cinnamon or pumpkin spice blend
- 1 large apple, grated or finely chopped (divided)
- 2 large medjool dates, chopped
- 1/8 tsp salt
- 1/2 tsp vanilla powder or extract
- 1/4 cup soy milk or other milk
Optional stir-ins
- 1 tablespoon ground chia seeds or flax seeds
- chopped walnuts or pecans
- maple syrup for sweetness
- plant-based protein powder
- drizzle of peanut butter
Instructions
- Stir the oats, water, cinnamon, half of the grated apple, chopped dates, salt, and vanilla in a large microwave-safe bowl, or in a small pot on the stove.
- Microwave for 90 seconds, or bring to a simmer on the stove and let it cook for about 3-4 minutes until oats have absorbed the water.
- Meanwhile, chop up or grate the other half of the apple. Add the fresh apple to the oatmeal. Top with the soy milk and any other toppings you
