Plant-Based Parmesan Pasta (super kid-friendly!)
Sometimes it feels that I have to come up with complicated recipes if I’m going to post them. Something that takes a lot of figuring out, testing, and creativity. However, most the time we all just want easy food that tastes good. Kids, especially, often want comforting food that doesn’t have strong flavors. This is that! Easy and simple.
This is something I make at least a couple times a month. It’s a staple.
If you’ve wanted buttered noodles or simple pasta with a little parmesan, but you’re trying to eat healthier and not eat animal products, I have the perfect solution for you!
How to Make Plant-Based Parmesan
First you make a quick jar of plant-based parmesan. It’s white and powdery just like the fake shelf-stable stuff in the green can. However, it’s nutrient-packed because it’s made of almonds (which have so many benefits!), and nutritional yeast, which adds even more nutrition. We add a little seasoning and a pinch of salt. It’s so good on pasta, soup, popcorn, toast. You have to try it.

Once you have your jar of plant-based parmesan ready, just sprinkle it onto hot pasta. Add vegetables if you want.
This packs well for lunches and is something I know I would frequently pack for my kids if I sent them to school (although it wouldn’t work for nut-free schools).

Plant-Based Parmesan Pasta
Ingredients
Plant- Based Parmesan (makes more than you'll use in one pasta dish)
- 3/4 cup blanched almond flour
- 1/4 cup nutritional yeast
- 1/2 - 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Pasta
- 1 lb whole wheat pasta (or any pasta)
- olive oil or vegan butter (optional)
Instructions
- Make the parmesan by putting the ingredients in a small jar, then shake. Keep this in the fridge. You won't use all of it for this pasta dish.
- Boil the pasta, and drain. Toss with a little bit of vegan butter or spray with some olive oil, if you'd like. You can skip this if you want.
- Toss with a heavy sprinkle of the parmesan, adding more until it's right to you. Enjoy on it's own, or add steamed or roasted vegetables and/or red pepper flakes.

We really enjoy this one! I like to add balsamic vinegar or lemon juice to the pasta before adding the parmesan. Sauteed veggies or fresh are delicious with it. We cut up the veggies and let the kids add the ones they want themselves for a fun build-your-own meal. Thanks!
