Quick Cucumber Salad

My daughter once checked out a Disney Princess Cookbook from the library. Surprisingly, there were a handful of healthy-ish recipes in there. One of them was Cri-Kee’s Lucky Cucumber Salad, from Mulan. I’ve made it several times, it’s so fresh and easy. Here is my version below.

This pairs well with almost any meal and takes little effort. This cucumber salad is kind of like quick pickles, but not as strong tasting. You’ll be lucky if there is any left!

Refreshing and simple, this is the perfect side to quickly prepare to go along with any meal.

  • 2-3 cucumbers, peeled and thinly sliced
  • 3 TBSP rice vinegar (or seasoned rice vinegar, which is sweetened)
  • 1-2 TBSP maple syrup
  • 1/4 tsp salt (more to taste)
  • 1 TBSP sesame seeds
  • pinch red pepper flakes (optional)
  • Variation: add 1 chopped avocado, some halved cherry tomatoes, sliced red onion, or fresh dill
  1. Peel and slice the cucumbers thinly, on a bias for that fancy diagonal shape if desired. You can use a mandolin here if you have one.

  2. Optional step, to increase sesame flavor: Toast sesame seeds in a small skillet on medium heat, until golden and fragrant, or even in the microwave for about 45-60.

  3. In a salad bowl, stir together the remaining ingredients. Toss cucumbers in and let chill for 30 minutes ideally for flavors to absorb. Keeps up to 2 days.
