Rawnola

If you love cold cereal, you’re going to love this no-bake granola. All the convenience of cereal but made of just whole ingredients. It’s

All cold cereal I know of has some sugar in it. This has just the best sweeteners of all–dates and raisins. You could even use different dried fruits in place of raisins to your preference. The dates are so sticky and sweet I would recommend keeping them.

I’ve been reading evidence-based advice that to maintain a healthy weight it’s best to eat the bulk of your calories at the beginning of the day, and eat less at night (breakfast like a king, lunch like a prince, dinner like a pauper). Thank goodness, because you’re going to want to eat bowl after bowl of this in the morning! It is pretty high calorie (about 300 calories for 1/2 a cup) since dried fruits, nuts and seeds are the most calorie-dense plant foods.

Layer it in some yogurt parfaits with your favorite plain non-dairy yogurt and fruit. Top a beautiful smoothie bowl with it. Sprinkle it on your next bowl of nice cream.

It would also be a great topping for these delicious Chocolate Monkey Bowls.

Breakfast doesn’t have to be boring, that’s for sure!

Rawnola

A quick and easy granola recipe that requires no baking and no sweeteners other than dates and raisins!
Servings 3 cups

Ingredients

  • 3/4 cup dates, any kind
  • 1/2 cup raisins
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup ground flax seed
  • 1/4 cup chia seeds
  • 1/4 cup hemp seeds
  • 1/2 cup nuts or seeds of choice (walnuts, almonds, peanuts, cashews, sunflower seeds, pumpkin seeds, or a combination)
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup rolled oats

Instructions

  • In a food processor, pulse the dates and raisins for at least a minute or more, until they are sticky and chopped up very small, the mixture forming a rough ball.
  • Add the rest of the ingredients except the oats. Process until the nuts and seeds are well-chopped up. Add the oats and pulse just until combined. You want the oats to create texture, not become oat flour.
  • Serve with your favorite plant milk or yogurt, as a smoothie or nice cream topping. Store in the fridge to best retain the nutrients of the ground seeds.
