Chia seeds, berries, and fermented foods (like the yogurt in this recipe) were three the of the top foods that fight inflammation! Can you guess what some of the other ones were? If you’re thinking they’re all plant foods, you’re right! The fiber, polyphenols and antioxidants that are only found in plants are keys to fighting inflammation.
Chia seeds also help with weight management, as they fill you up with lots of fiber and promote really good digestive wellness (having effective bowel movements every day is really helpful in weight loss and overall wellness!). Chia seeds also contain one of the healthiest fats that should NOT be avoided–omega 3 fatty acids.
You don’t want to only eat a few anti-inflammatory foods, however. It’s best to eat as much variety of them as possible. Pack your day with whole, plant foods and fermented foods to get started!

What Variations of this Chia Pudding Can I Make?
The options for this snack are endless!
- mix up the berries
- add sliced banana
- use any kind of milk or yogurt
- use strawberry jam as your sweetener for more strawberry flavor
- try coconut, almond, lemon or strawberry extract instead of vanilla
- add crushed graham crackers or granola for some crunch
- You could also make a quick raw granola that would be delicious layered with the creamy, tangy chia pudding. My raw granola (rawnola) recipe makes it easy to get tons of micronutrients and healthy fats in from nuts and seeds.
What Yogurt Is Best?
I love to make homemade soy milk yogurt, since soy milk has the most amount of protein of all the plant-based milks, and it’s cheaper to make it than buy it. I have a blog post explaining how to make this very easy soy milk yogurt! It’s really SO easy. You can use it straight, or strain it for thicker yogurt. Since straining it reduces the volume so much, I just use it straight from the jar after it ferments for things like this chia pudding.
As far as store-bought yogurt options, they might be hard to find in your area. Kitehill has a greek yogurt made with soy and almond milk that has 17 grams of protein per serving! Silk has a soy milk yogurt but I have never been able to find it in stores near me. I often just buy almond milk Silk yogurt (it’s at every Walmart I’ve been to), which isn’t as high in protein but has that good live bacteria. You can also use regular dairy greek yogurt if you’re not strictly plant-based.

Strawberry Cheesecake Chia Pudding
Ingredients
- 1/2 cup plain yogurt (any kind!)
- 1 cup almond or soy milk (or any milk)
- 1/8 tsp salt
- 1/3 cup chia seeds
- 2-3 TBSP maple syrup or strawberry jam (any sweetener will work)
- 1 tsp vanilla extract
Optional Toppings
- fresh strawberries, chopped
- crushed graham crackers or granola
- whipped coconut cream
- shredded coconut
- chopped pecans or walnuts
Instructions
- In a bowl with a lid, stir together all the ingredients. Stir vigorously to get the yogurt smooth without clumps.
- Let the chia pudding sit for 30 minutes or more in the refrigerator, until it's thickened.
- If you'd like, layer the pudding in small jars with chopped strawberries and crushed graham crackers or granola. Top with whipped cream, shredded coconut or chopped nuts if you'd like to get fancy!

This is my new favorite breakfast! I always thought chia pudding sounded odd, so I had never tried it. Took a chance on this recipe and loved it! Tastes amazing especially with the berries and granola.
