When life hands you a mediocre watermelon….you make watermelon popsicles! The flavor gets a major pump up with strawberries, a little lime juice and some maple syrup (if needed). They have such a refreshing flavor! If you have kids in your life, they will love making and eating these with you.
This recipe idea is fully from my 3-year old daughter. She kept saying she wanted to make watermelon popsicles (she asks to make popsicles pretty much every day). I said, “I don’t really know how to make watermelon popsicles.” She ran to a random National Geographic Kids magazine that had a picture much like these. There was no recipe, so we figured it out, and loved the result.
If you don’t want to make popsicles, just make the pink part and drink it for a watermlon slushy! Tastes like the epitome of summer.

Watermelon Popsicles
Ingredients
- 4-6 cups chopped watermelon (I eyeball it)
- 1 cup fresh or frozen strawberries
- juice of one lime
- 1 blip maple syrup to taste (optional)
White layer
- vanilla plant milk
Green layer
- 1 cup spinach or greens
- 1/2 banana
- 1/2 cup frozen pineapple or mango
- 1/2 cup water
Instructions
- In a blender, blend the strawberries, watermelon, lime juice together. Taste, and add a little maple syrup if you feel it needs it (some watermelon is sweeter than others). Pour into popsicle moldes, about 2/3 of the way up. Freeze at least 2 hours. Once slushy/firm enough, add the sticks. This is best when there are no covers on your sticks. If you only sticks with a cover, you might want to only make the pink layer.
- Pour a little bit of vanilla-flavored plant milk on top of each popsicle around the stick, and freeze again.
- Blend up the ingredients for the green layer, and pour a little bit on top of each popsicle. Enjoy the rest as a green smoothie.
- Once completely frozen, run the mold under hot water, slide them out, and enjoy!
