Want to gift a cute jar of brownie mix, or replace the less-healthy boxed brownie mixes you used to buy? These very fudgy brownies hit the spot without too much unhealthy fat or sugar, and with whole grains and lots of fiber! They won't spike your blood sugar as much or add any cholesterol like most brownies.
1/2cupchopped walnuts or pecans (optional, helps fill up the jar and make a pretty topping)
To make the brownies
1/4cupany nut or seed butter
3/4cupmashed baked sweet potato, pumpkin puree, or mashed banana (will have some banana flavor)
1/2cupwater
1tspvanilla extract
Instructions
To make the mix, layer the dry ingredients in a small jar (pint size). Leave the chocolate chips for the top. Label it with the following directions or print the tag I have in the blog post to attach.
To make the brownies: Preheat oven to 350 F. Line an 8x8 inch pan with parchment paper or grease it. In a bowl, mix together the dry mix and add: 1/4 cup peanut butter (or other nut butter or oil)3/4 cup mashed baked sweet potato1/2 cup water1 tsp vanilla extract Batter will be thick. Spread batter into pan. Sprinkle with additional chocolate chips, coconut, and/or nuts, if you don't plan to make the frosting. Bake 25 minutes-30 minutes. A toothpick should come out clean. Let cool before cutting. They are even better the next day.
To make sweet potato frosting (so good!)
Bake a small sweet potato in the microwave for about 5 minutes, until soft. Blend together in a blender: 1/2 cup mashed baked sweet potato, 1/4 cup maple syrup or powdered sugar, 2 TBSP peanut butter, 2 TBSP cocoa powder. If needed, add more sweetener to taste and a little milk to thin to help it blend.
