A simple, delicious sandwich for lunch or dinner.
Peel the sweet potatoes. I use 1 potato for every 2 sandwiches I want to make. Sometimes I don't even peel them.
Grate the sweet potatoes.
Cook them in a skillet on med-high heat, adding small amounts of water every minute or so, until they look soft but not mushy. Season with salt, pepper, onion powder, garlic powder, and/or smoked paprika if desired for even extra flavor.
Remove from heat and pour the BBQ sauce over it, and coat well. Serve on a whole grain bun with additional BBQ sauce, if desired.
