1.5TBSPcornstarchsee post for substitutions
2TBSPolive oil or avocado oil
Instructions
Preheat oven to 425 degrees. Line two baking sheets with parchment paper or spray with oil.
Peel the sweet potatoes if you'd like, or simply scrub them if you like the peel. Slice into shoestring shapes, about 1/4-1/2 inch fry shapes.
In a large bowl, mix together the remaining ingredients: lime juice, garlic, mustard, salt, pepper, chili powder, cornstarch, and oil. It will form a smooth paste. Make sure all the cornstarch is stirred in so you don't have white dust on your fries.
Toss the fries in the mixture in the large bowl until each fry is lightly coated. Spread the sweet potatoes on the two pans so they all have room to "breathe" and aren't so close they will steam instead of roast.
Bake for 20 minutes, then flip the fries and rotate the pans, and bake for 10-15 minutes more, until soft when pierced with a fork and crispy looking on the outside. If you'd like them even more browned, you can use the oven broiler for 2-3 minutes, but watch them very carefully!Let them cool slightly to further crisp up. Sprinkle with more salt if you feel they need it.
Enjoy with your favorite sauces, such as ketchup, mustard, barbeque sauce, fry sauce, guacamole, or just on their own because they are that good. Leftovers keep well in the refrigerator, and can be reheated in the microwave or air-fryer. I even like them cold in bowls or on salads.
