I couldn’t wait to post these delectable and healthy little morsels! They are a chocolate chip cookie recipe of mine, but for once they don’t have any beans or vegetables or banana in them! Haha. So if you’re into a healthy cookie without weird ingredients, this is for you. They are SO handy to freeze for little packs of energy, and it’s much cheaper and healthier to make your own snack foods like that instead of buying them.
I’ve tested and tweaked these so many times to be that perfect combo of healthy but delicious!
What Makes these Oatmeal Chocolate Chip Cookies Healthier than Other Cookies?
Not having weird ingredients does NOT mean they don’t have health benefits. These cookies are designed to be filling and full of fiber, and even help milk production for breastfeeding moms (flax seed and oats are galactagogues, meaning they help with milk production). Chickpeas are also in that category, so you may want to try my Chickpea Chocolate Chip Cookies, too!
Most cookie recipes have double the sugar, a cup of butter, and use white flour. Here, we swap whole grain oats for the white flour, adding protein, fiber, and important minerals. This alone makes them spike your blood sugar less! We’re also using whole-food fats (nut or seed butter) instead of butter or oil. My favorite combination is 1/2 almond butter and 1/2 tahini. Even if you don’t love tahini, it gives cookies and incredible subtle depth of flavor.
We’re also adding the healthiest fats: flax seeds and walnuts! Flax seeds and walnuts are especially good at reducing inflammation because of their omega-3 fatty acids. Not only that, but flax seeds fight cancer with their lignans, improve constipation because they contain soluble and insoluble fiber, and honestly they have scores of other benefits. I try to eat them every day as recommended, and this is a super easy and convenient way to eat them.
How Many Cookies Does this Recipe Make?
You’ll get 50 cookies when you use a medium-sized cookie scoop (about 1.5 tablespoons of dough). I use this cookie scoop SO often! It’s definitely worth it if you don’t have one. You’ll use it for life!
I love making a batch this big because I often take cookies to people or freeze leftovers for healthy treats later on. If you know any athletes or pregnant or breastfeeding moms, these cookies are the perfect treat to take them to give them nutritious energy!
I press the scoops of dough down with wet fingers so they flatten out a bit more.
