These vegan, Instant Pot (or Crock Pot) baked beans are made completely from scratch (no store-bought BBQ sauce, here!) and taste amazing! Smoky, sweet, tangy perfection and so very healthy for you!
1/2jalepeno, minced (can use the whole thing for more heat)
4clovesgarlic, minced
1can tomato sauce (14 oz)
1/4cupapple cider vinegar
3TBSPsoy sauce
3TBSPpure maple syrup
3TBSPmolasses (or more maple syrup)
4TBSPyellow mustard
2tspsmoked paprika
1/2 tspliquid smoke
3canssmall white beans (or 4 cups, cooked)
Instructions
Instant Pot Directions (about 30 minutes total time)
Using the saute feature, saute the onions and jalepeno for about 8 minutes, or until brown and soft. Add garlic, and saute 1 minute more.
Meanwhile, while onions are cooking, combine all the reamining ingredeints (except beans) in a bowl or liquid measuring cup.
Add sauce to the onion mixture, set Instant Pot to pressure cook the sauce for 10 minutes.
Choose either a natural or quick release, then add the beans and stir together and taste. Add more liquid smoke for stronger smokiness, more syrup for more sweetness.
Slow-Cooker Method (3 hours, but makes your house smell amazing!)
In a skillet, saute the onions and jalepeno for about 8 minutes, or until brown and soft. Add garlic, and saute 1 minute more.
Meanwhile, while onions are cooking, combine all the reamining ingredeints (except beans) in a bowl or liquid measuring cup.
Once onions are soft, combine the onions, sauce, and beans into a slow cooker. Cook on low for 3 hours, or until onions are completely soft and sauce is dark red and sweet. Taste, and adjust if necessary. I haven't added anything, but you can add more liquid smoke for stronger smokiness, more syrup for more sweetness.
