1lbdried black beans (about 2 1/2 cups), soaked at least 4 hours, preferably
6clovesgarlic, minced (2 tablespoons)
4cupsvegetable broth
1tspcumin
2tspdried oregano
Add after cooking
2tsplime juice
1/2tspsalt (more to taste)
Instructions
Soak the beans for at least 4 hours (or overnight), then drain the soaking water off. If you really need to skip this step, you can. Just add 2 cups of water to the crock pot. I like to soak them because they are more easily digested.
Combine the ingredients in the slow cooker and set to high for 3 hours. If your beans are unsoaked, they might take more like 4 hours to cook. While it's cooking, I get some brown rice cooking in the Instant Pot. Equal parts water and rice for 20 minutes on high pressure.
Once beans are tender, add the salt and lime juice.
I like to serve this with rice, avocado, and cilantro for a simple meal. You can also serve with salsa, chips, tortillas, etc. for a full burrito bowl.
Instant Pot Instructions
If you don't have time to do the slow-cooker method, you can make these in the Instant Pot the same way. Cook on high pressure for 18 minutes if you use soaked beans, and 30 minutes if you use unsoaked beans. Do a quick or natural release.
