No-Bake Vegan Brownie Bites

A version of these chocolate truffles was one of the first “healthy” treats my family ever made when I was about 15 and we started being more health conscious. Unlike the avocado pudding and other weird recipes, these were actually good! (There I go…saying something that I am always chagrined to hear people tell me. “This is actually good!” as if it’s a huge surprise. 🙂 ) They are very rich, chocolatey and loved by health-nut and omnivore alike.

Sometimes lightened-up dessert recipes have the word “healthy” in front of them even though they’re just less-bad than the original. Less sugar and less butter doesn’t make something healthy, just healthier. So I don’t use the term “healthy” lightly. These are truly nutritious and not bad for your health. Although high in fat and calories, they are healthy calories and fat with lots of omega 3’s, fiber, potassium and magnesium. If you’re watching your weight though, I do warn you that these are easy to indulge in and are high-cal.

This is my go-to treat when I want something sweet and indulgent in a hurry.

Healthy Brownie Bites

Naturally-sweetened with dates, these are little balls of chocolate heaven and require only three ingredients!
Prep Time 10 minutes
Total Time 10 minutes
Servings 5 servings

Ingredients

  • 1 cup walnuts I've used other nuts or seeds, too
  • 1 cup pitted dates Medjool are best but others are fine, too
  • 2 tbsp cocoa powder unsweetened
  • 1/4 tsp salt (1/2 tsp if you like sea salty chocolate)
  • 1 tsp vanilla extract optional

Instructions

  • In a food processor or chopper, process all ingredients. Let run several minutes until walnuts are completely smooth and the mixture is shiny with the oil from the walnuts. Add a drizzle of honey if mixture is not sticking together.
  • Form into 10 balls. Roll in shredded coconut, chopped nuts, or more cocoa powder if desired.
    Store in refrigerator.

Notes

If your dates are very hard, soak in hot water for 10 minutes first.
