Almond Baked Oatmeal (GF, WFPB, Vegan, Oil-Free)

Many baked oatmeal recipes call for for fruit, like mashed bananas at least, and sometimes I don’t have a ripe banana or even frozen ones to use. This baked oatmeal recipe uses only pantry ingredients–you can even use shelf-stable milk or substitute water if you needed to.

Nutrition Qualities of Almond Baked Oatmeal

Although delcious, this is not a white flour-and-butter-croissant with powdered sugar and a few slivered almonds on top. Made with whole grains, flax seed, almonds, soy milk and just enough maple syrup, this is as close as you can get to a flaky, powdery pastry while still eating whole foods.

I love this baked oatmeal because it has some healthy fats in it from the almond flour. Children especially need those fats and calories, and sometimes it’s hard to get enough when they’re not eating animal products or handfuls of nuts and seeds. It’s also got lots of fiber from the oats and flax seed.

Nuts are incredible for your health! They can lower inflammation, cholesterol, and high blood pressure. They provide so many important minerals and nutrients. If you don’t love nuts, use almond flour in your baking to get that nutrition in. It makes things tender without butter.

How Can I Make This Higher In Protein?

For the most protein, make this with soy milk, and add a little protein powder to it. You can’t even taste it if you use 3 tablespoons or less. I think powdered almond butter would make a good addition (like PB Fit but with almond butter), but I haven’t ever bought it or tried it.  And then, serve it with more soy milk on top.

Can I Add Other Toppings?

Yes, you can add berries on top (fresh or frozen) either before you bake it or in your serving dish as you eat it. You could add chocolate chips, chopped dates, or any other nut, seed, or dried fruit.

Can I freeze Almond Baked Oatmeal?

You sure can freeze it! You can freeze the whole pan or individually wrap the bars for a single serving in the future, just a 20-second microwave blast away.

Can I Make this Nut-Free?

You could skip the slivered almonds on top, but the almond flour is key here for the flavor and texture. For a nut-free baked oatmeal, try my Lemon Berry Baked Oatmeal.
