Pumpkin Pie Smoothie (High Protein & No Protein Powder!)

This creamy pumpkin pie smoothie is packed with plant-based protein and nutrients—without protein powder! A delicious whole-food, vegan breakfast or snack. It contains 16 grams of protein and 12 grams of fiber, keeping you full for hours.

I LOVE pumpkin season. I am even possibly alive today because of pumpkin pie (see this reel to find out the story) (seriously go watch it, it’s a tear-jerker). Here, I have a smoothie that is super yummy and healthy. Every fall season when I remember it, I wonder why I haven’t made it since last fall. It even sneaks in cruciferous vegetables that we should be eating every day.

If you like feeling full and fueled from breakfast until lunch, this is the fall breakfast you need to make on repeat. Also, it’s made of all very inexpensive, common ingredients. No online-ordered expensive protein powder needed here. (Although, you can add some plain or vanilla powder if you really are protein concerned. 😉

Daily Dozen Superstar!

Are you familiar with Dr. Greger’s Daily Dozen? It is a list of the dozen foods that, according to evidence, you should strive to consume every day for maximum health and longevity.

Here is a daily_dozen_checklist if you’d like to laminate it or just put it on your fridge for inspiration.

This smoothie will check off this many boxes:

beans (via soy milk!), cruciferous vegetables (frozen cauliflower–adding vegetables without turning the smoothie green), other vegetables (pumpkin), fruit (banana), nuts (peanut butter) and flaxseeds (they are their own category they are just that powerful).

Getting 6 “points” in one glass is pretty amazing.

A good smoothie is so nutrient-dense and can help you maintain a healthy weight because you feel so full from all the liquid and fiber. Try some of my other smoothies (because honestly, we can all wing a smoothie, but when you follow a recipe it can really be a game-changer).

Equipment

  • blender

Ingredients

  • 1/4 cup canned pumpkin
  • 1 frozen banana (about a cup of frozen banana chunks)
  • 1/4 cup frozen cauliflower
  • 1 cup soy milk
  • 1 teaspoon pumpkin spice
  • 1 large date or 1 tablespoon pure maple syrup

If your date is hard, soak in hot water for a few minutes.

Notes

Nutrition facts are with 1 tablespoon of peanut butter and 1 tablespoon flax seed. For lower calories, use powdered peanut butter and almond milk instead of soy milk (but almond milk will decrease protein by 7 grams).
You can double the amounts of pumpkin and cauliflower, it will just be less sweet overall.
